Ingredients:
2 cups oat flour
½ t baking soda
1 t baking powder
1 T lemon juice
2 t cinnamon
2 T ground flax
3 ripe bananas, medium
½ c applesauce
¼ c maple syrup
⅔ c non-dairy milk
½ c raisins (optional)
½ c chopped walnuts (optional)
Instructions:
Preheat the oven to 375°F
In a medium bowl, combine the flour, baking soda, baking powder, and cinnamon
In a separate bowl, mash the bananas and add the applesauce, maple syrup, flaxseed meal, raisins, walnuts (if using), lemon juice, and non-dairy milk and stir
Combine the wet and dry ingredients and stir gently until combined
Scoop or pour the batter into the muffin pan or loaf pan
For muffins, bake for 25 to 28 minutes
For bread, bake for 60 to 70 minutes, until browned on the outside and firm yet giving to touch
