Ingredients:
1 1/4 c raw cashews, soaked
3/4 c maple syrup
1 can pumpkin puree (16 oz)
2 t pumpkin pie spice
1 1/2 T arrowroot or corn starch
1 vegan pie shell, baked
Instructions:
Soak your cashews overnight or boil them in approximately 2-1/2 cups of water to a boil, allowing them to soak for at least 30 minutes.
Drain the cashews and place in a high-speed blender such as a Vitamix.
Add the pumpkin, maple syrup, pumpkin pie spice, and arrowroot.
Blend on high speed for 3-5 minutes until the mixture is completely creamy.
After blending, do a taste test and add salt, if desired.
Add the mixture to a saucepan and cook on medium heat until the mixture bubbles and is thickened.
Pour into a baked pie shell and allow to cool.
Store in refrigerator.
