2 cups black eyed peas - soaked and drained
1 large jalapeño, chopped
1 small onion, chopped
2 small tomatoes, chopped
2-3 garlic cloves, minced
Soak the 2 cups of black eyed peas overnight or for a couple of hours. Drain, rinse and then add to an instant pot.
Chop the jalapeño, onion, tomatoes, and garlic cloves and add to the instant pot.
Fill the instant pot with water to cover the peas by about an inch.
Set the peas to cook for 30 minutes, no vent (sealed).
An instant pot is not necessary to make this recipe it simply speeds up the cooking time. This can be cooked on a regular stove with adjustments to cooking time. Cook until the peas are tender.
If time does not permit soaking the peas, they can still be prepared without soaking. Rinse them well then cook. Soaking helps with cook time along with digestion.
