Ingredients
¾ c brown rice
¾ c dry red lentils
1 t cumin
¾ t turmeric (adjust to taste)
1 t curry powder (adjust to taste)
1 small head of cauliflower chopped into florets
1-2 carrots (diced)
1 head of broccoli chopped into florets
Any of your favorite vegetables cut into bite-size pieces
4 c vegetable broth
Small bunch of cilantro chopped, if desired for topping
Directions
Combine all ingredients, except cilantro, if using, in your Instant Pot.
Set the timer for 6 minutes and let natural release for approximately 10 minutes.
Recipe Notes:
Serving size is equivalent to approximately 2 cups
Stove Top: increase the broth to 5 ½ cups and cook covered for approximately 20 minutes
Switch out the type of rice, if desired
Use yellow split peas instead of red lentils
Add your favorite vegetables - including greens!
