1 onion, peeled and chopped
5 cloves garlic, peeled and minced
16 oz button mushrooms, sliced
1/4 cup white wine vinegar
1/4 cup vegetable broth
2 cups plant milk + 2 T whole wheat flour
2 T Dijon mustard
1 T paprika
2 T soy sauce
chopped spinach
Cook onion until soft, add the vinegar and vegetable broth, garlic, and mushrooms
Whisk the flour into the plant milk and mix thoroughly
Add the remaining ingredients and simmer for 5-8 minutes, stirring to prevent burning
I serve this over rice, pasta, or baked potato. It pairs great with a salad and roasted vegetables
