Makes 1 Serving
1 c uncooked quinoa (or brown rice)
1/2 c frozen corn
1/2 c fresh salsa
Cilantro (optional)
Cook quinoa or rice as directed on the package.
Add the corn during the last 5 minutes of cooking.
If your salsa is chunky, you can puree half, if desired.
Combine the warm quinoa with salsa, stirring to mix well.
Fold in cilantro, if using.
To make a meal out of this dish, stir in black beans, avocado, red onion, and hot sauce.
