Banana Bread or Muffins

Ingredients:

  • 2 cups oat flour

  • ½ t baking soda

  • 1 t baking powder

  • 1 T lemon juice

  • 2 t cinnamon

  • 2 T ground flax

  • 3 ripe bananas, medium

  • ½ c applesauce

  • ¼ c maple syrup

  • ⅔ c non-dairy milk

  • ½ c raisins (optional)

  • ½ c chopped walnuts (optional)

Instructions:

  • Preheat the oven to 375°F

  • In a medium bowl, combine the flour, baking soda, baking powder, and cinnamon

  • In a separate bowl, mash the bananas and add the applesauce, maple syrup, flaxseed meal, raisins, walnuts (if using), lemon juice, and non-dairy milk and stir

  • Combine the wet and dry ingredients and stir gently until combined

  • Scoop or pour the batter into the muffin pan or loaf pan

  • For muffins, bake for 25 to 28 minutes

  • For bread, bake for 60 to 70 minutes, until browned on the outside and firm yet giving to touch
