Ingredients:
1 T flax meal
3 T water
1 1/2 c whole white wheat flour
1/2 c old-fashioned oats
3 t baking powder
sprinkle of salt
1 t ground cinnamon
1/2 c chopped walnuts
1 c raisins
3/4 c unsweetened plant milk
1/2 c unsweetened applesauce
1/4 c molasses
Instructions:
Preheat the oven to 375°F.
Line the cups of a muffin tin with silicone muffin molds (or use a nonstick muffin tin).
In a small bowl, mix the flax meal and water. Set aside for 8 to 10 minutes to thicken.
In a large mixing bowl, combine the flour, oats, baking powder, sea salt, cinnamon, walnuts, and raisins and mix thoroughly.
In a separate bowl, whisk together the milk, applesauce, molasses, and thickened flax mixture. Add the wet ingredients to the dry ingredients and mix only until moistened. Do not overmix the batter, as this will make your muffins tough.
Distribute the batter evenly among the muffin tin cups and bake for 20 to 25 minutes, until a toothpick inserted in the center of a muffin comes out clean. Remove from molds and allow to cool for 10 to 15 minutes before serving.

These muffins are great for breakfast or a quick snack. They freeze well, if they last that long!
