Fast Easy Bean Soup

Ingredients:

  • 2 14 oz cans of beans, any variety (I like pinto and black beans), drained and rinsed

  • 1 14 oz can of fire-roasted tomatoes or your favorite salsa

  • 1 12 oz bag of frozen corn

  • 1 t chili powder

  • 1 t onion powder

  • 1 t garlic powder

  • 1 T lime juice (adjust as necessary)

  • cilantro, chopped

Instructions:

  • Add all the ingredients to a saucepan and let simmer for around 20 minutes

Recipe Notes:

Serve this with baked corn chips, baked potatoes, or rice. Very filling!
