2 garlic cloves, chopped
1 pkg firm or extra firm tofu, crumbled
1/2-1 tsp turmeric
1/2 tsp chili powder
1/2 tsp cumin
3 tbsp nutritional yeast
1 tbsp oregano
1 tsp crushed red pepper
1 lb. potatoes cut into bite size pieces
salt & pepper to taste, optional

black beans
lettuce
hummus
salsa
jalapeños

Ezekiel wraps or whole wheat tortillas/wraps
Preheat oven to 400 degrees and line a large baking sheet with parchment paper.
In a medium bowl, crumble the tofu.
Add the onion, garlic, turmeric, chili powder, cumin, nutritional yeast, oregano, and crushed pepper. Toss and mix well.
Cube the potatoes into bite-size pieces and salt and pepper, if desired.
Place the tofu mixture on one side of the baking dish and the potatoes on the other side.
Bake for 15 minutes, stir and bake for an additional 15-20 minutes. Check to ensure the potatoes are cooked through. If not, remove the tofu and cook the potatoes until tender.
Spread a generous amount of hummus into the center of the tortilla. Add the black beans, tofu crumble, potatoes and any other toppings you desire. Roll up the tortilla and enjoy.
