Powerful Breakfast Muffins

Ingredients:

  • 3 c old fashioned oats

  • ½ c ground flax

  • 3 t cinnamon

  • 1 t baking soda

  • 1 t baking powder

  • 3 medium-large ripe bananas

  • 3 large Medjool dates or 8 Deglet dates

  • ½ c unsweet plant milk

  • 2 T lemon juice

  • 1 c mixed nuts, pumpkin seeds, shredded unsweetened coconut, sunflower seeds, raisins, dairy-free chocolate chips - use your favorites!

Instructions:

  • Preheat oven to 350°.

  • Combine dry ingredients in a blender and blend until the oats are finely chopped

  • Place combined dry ingredients into a bowl

  • Add bananas, dates, and plant milk into the blend and process until smooth

  • Add wet ingredients into the bowl with the dry ingredients 

  • Fold the raisins, etc., and mix well

  • Fill the muffin cups

  • Bake for 15 minutes and test

Recipe Notes:

These also work well as mini-muffins and bars. Freeze any extras for later!
