Carrot Cake Muffins

Ingredients:

• ¾ cup old fashioned oats

• ½ cup whole wheat flour

• 2 T baking powder

• ½ t baking soda

• 1 t cinnamon

• ¼ t nutmeg

• ¼ t ginger

• ¼ t cloves

• 2 flax eggs (2 T ground flax with 5 T water)

• 2 ripe bananas

• 3 Medjool dates

• ¼ c plant milk

• 2 t vanilla

• 1 1/2 c shredded carrots

• ½ cup chopped walnuts (optional)

• ½ cup unsweetened coconut (optional)

• ½ cup raisins (optional)

• ¼ cup dairy-free chocolate chips {optional)

Instructions:

1. Heat oven to 375°

2. In a small bowl, make the flax egg and set aside

3. Combine oats, flour, baking powder, baking soda, and spices in a blender - blend until well combined. Move to a large mixing bowl

4. Combine bananas, dates, plant milk, and vanilla in the blender. Blend until smooth

5. Add the wet mixture to the dry ingredients and combine - don't forget the flax egg

6. Incorporate the shredded carrots, chocolate chips, coconut, walnuts, and raisins and mix well

7. Spoon into silicone muffin pan and bake for 20 minutes
