Cauliflower Bisque

Ingredients:

  • 1 head of cauliflower, halved

  • 3 medium potatoes, halved

  • 1 onion, halved

  • 6 cloves of garlic

  • 6 c vegetable broth

  • 2 T dried dill

  • 1 T smoked paprika

  • 1 T garlic powder

  • 1 T onion powder

  • 3 cups non-dairy milk, unsweetened

  • 4 T stoneground mustard

  • 4 T nutritional yeast

Instructions:

  • Place first 9 ingredients in an Instant Pot and cook on manual for 12 minutes

  • Add mustard, nutritional yeast, and non-dairy milk

  • Blend with an immersion blender until smooth

Recipe Notes:

Serve over brown rice or pasta.
